Wagyu cattle ranch operators open first butcher shop in Trumbull County

The owners and operators of a Wagyu cattle farm in Trumbull County are transitioning from filling online orders to welcoming customers into their first brick-and-mortar butcher shop.

Carney Wagyu Butcher Shop opened on Aug. 13 at 115 State Road NW in Warren.

Michael Carney and Sandra Clark have been operating the Carney Wagyu Cattle Ranch in Southington for seven years. They’re supplying several area restaurants and individuals in northeast Ohio regularly with high-quality and highly-rated Wagyu beef, including The Grand Resort, Delmonico’s and Vernon’s.

“Anyone who has tasted our products understands the passion and attention-to-detail that goes into crafting authentic Wagyu beef. And now to have a physical location where we can share that knowledge and commitment with the community is truly something special,” Carney said.

They’re selling locally-raised Wagyu beef as well as chicken, pork, in-house sausage recipes like the Brier Hill sausage and other specialty items in the full service, Italian-influenced butcher shop.

There’s a grand opening celebration happening from 10 a.m. to 4 p.m. Aug. 23 at the new butcher shop, where community members are invited to sample products and enter giveaways.

Carney had previously owned Hereford cattle at his Southington-based farm. But after trying Wagyu steak during a meal, he changed course by investing in a new herd whose name translates to “Japanese cow.”

Regular store hours at the Carney Wagyu Butcher Shop are from 10 a.m. - 6 p.m. Tuesday through Friday and 10 a.m.- 2 p.m. on Saturday; closed Sunday and Monday.

Customers can also place orders online.

The shop’s operations manager Jason Lemmon brings 33 years of experience in whole animal butchering, sausage making and meat smoking to the new business.

Carney said next up he’s working on completing the Authentic Wagyu Certification process and would be the first provider in the country to receive the certification.
